Mango Halloumi Salad Bowl
This is a fabulously quick and easy little recipe that you can rustle up whenever you need some comfort food, because it’s filling, warming and full of flavour. Salty halloumi is marinated in Chilli Pepper Pete’s Hot Fruity Sauce, so it’s bursting with mango sweetness and a fiery kick, and laid on a bed of fluffy bulgur wheat that soaks up all the smoky flavours of Chilli Pepper Pete’s Harissa. A sprinkling of fresh mint and a handful of rocket leaves completes the package.
Ingredients
100g halloumi
2 tbsp Chilli Pepper Pete’s Hot Fruity Sauce
A splash of olive oil
80g bulgur wheat
1 tbsp Chilli Pepper Pete’s Harissa
A pinch of salt
A small bunch of fresh mint
A large handful of fresh rocket
Makes one salad bowl
1. First, cut the halloumi into slices around 5mm thick, and marinate in two tablespoonfuls of Chilli Pepper Pete’s Hot Fruity Sauce and a splash of olive oil, for at least ten minutes (or as long as you have).
2. Meanwhile, cook the bulgur wheat according to the instructions on the packet, then drain and mix with Chilli Pepper Pete’s Harissa, seasoning with a pinch of salt.
3. Get a frying pan really hot and briefly fry the halloumi until it’s golden on both sides. Mix the fresh rocket through the bulgur wheat and then fill your bowl, topping with the halloumi slices. Finish off with a sprinkling of chopped fresh mint and an extra drizzle of Chilli Pepper Pete’s Hot Fruity Sauce.
